Fun Bakery - Chocolate filled roulade
When you're in deep shit, what would you do to cheer up yourself? Shop til ur credit card reaches it's limits? Sleep for 18hrs without even going pee? Or keep eating junk food as if you will never be able to eat again for the rest of ur life?
To me, lately, I'd rather go for baking therapy or to be exact : kitchen therapy! During the process, you have to focus.. just focus on what you are doing so when it's done, you've been chilled. It works on me anyway..
On Wed nite, I baked this a little bit more challenging "cake" - "Chocolate filled roulade". It's not perfect but still fine, I am sure it's gonna be a lot better for the 2nd attempt.
Ingredient:
- 1 cup confectioners' sugar + extra to dust
- 4 large eggs , seperated
- 1/3 cup all purpose flour
- 1 tsp vanilla extract
- 2 tbs cornstarch
- 1/4 tsp salt
- 3 tbs rum
- 1/2 cup chocolate spread
- 3 tbs dark chocolate flakes
Directions:
- Preheat the oven to 180C
- Line a 10 x 15 inch pan with baking paper
- Beat the egg yolks, confectioners' sugar and vanilla extract in a large bowl until pale and creamy
- Fold in the flour and cornstarch
- Beat the egg whites and salt with an electric mixer at high speed until stiff
- Gentle fold them into the batter
- Spoon the batter into the prepared pan
- Bake for about 15 min, or until risen and golden
- Dust a clean kitchen towel with confectioners' sugar. Turn the cake out onto the towel. Roll up the cake, using the towel as a guide. Leave, seam side down, until cool
- Unrool the sponge. Drizzle with rum and cover withe the chocolate spread. Roll up using the towel as a guide. Wrap the roulade in foil. Chill for 2 hrs
- Unwrap and transfer to a serving dish
- Dust with the confectioners' sugar and sprinkle with flakes of chocolates
- Leave, seam side down
ready to pour onto the pan
after baking the batter for abt 15 mins
roll up the cake with a clean towel
spread the chocolate spread on the sponge cake
roll and wrap it with foil and chill it out for abt 2 hrs
dust with cinfectioners' sugar and sprinkle with chocolate flakes! I rolled it a bit too loose but still looks ok eh?
