Fun Bakery - Mascarpone chocolate cake

I baked this cake for Serge's bday, another suen-mei-ologist frm our sue-mei group!

The cake is juz lovely, if u r a big fan of chocolate cake, believe me, you would die for it!!

Ingredient:
- 200g bittersweet chocolate, chopped
- 2/3 cup (180g) butter
- 4 large eggs, seperated
- 1 1/3 (200g) icing sugar (I would suggest reducing to abt 1 cup)
- 1 tbs cornstarch
- 1 tbs mascarpone cheese

Mascarpone topping:
- 200g mascarpone cheese
- 4 tbs icing sugar
- 125g bittersweet chocolate

Direction:
- Preheat the oven to 180C
- Butter a 9" round cake pan
- Line w/ waxed paper
- Melt the chocolate and butter in a double boiler over barely simmering water. Let cool
- Beat the egg yolks and icing sugar in a large bowl with an electric mixer at medium speed until pale and creamy
- With mixer at low speed, beat in the cornstarch and mascarpone, followed by the cooled chocolate mixture
- Beat the egg whites at high speed until stif peaks form. Fold into the mixture
- Spoon the batter into the prepared pan
- Bake for abt 35mins or until a toothpick inserted into the center comes out clean
- Cool the cake and turn into a rack

Macarpone Topping:
- With mixer at medium speed, beat the mascarpone and icing sugar in a medium bowl until creamy
- Spread over the top of the cake
- Melt the chocolate in a double boiler over barely simmering water
- Set aside to cool a little then drizzle over the cake

the chocolate mixture
eggyolks + icing sugar
fold in the eggwhites into the chocolate mixture
the batter is ready
the cake looks like a pcs of huge crunchy cookie
dada.. isnt it fabulous?!
